Yields:
About 27 small cookies
Ingredients:
- 1 egg
- 1/2 cup (113 grams) butter, unsalted
- 1/2 cup packed, brown sugar
- 1/4 cup white sugar
- 1 tablespoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats (not instant/quick cook oats!!)
- 3/4 cup flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 cup semi-sweet chocolate chips (optional)
- 1/2 cup nuts or raisins (optional)
Steps:
- Preheat oven to 350F (180 C)
- Combine eggs, sugars, vanilla, and butter and beat with an electric mixer until creamed and well-combined
- Scrape down sides of bowl with spatula. Add the oats, flour, cinnamon, baking soda, salt and beat until just combined on low speed
- Add optional chocolate chips, nuts, or raisins and beat/mix until just combined
- Scoop out measured amount onto baking sheets
- Bake for around 10 minutes...even if the cookies still look gooey and glossy in the center take them out! They will set once out of the oven and it's very important that you don't over bake these cookies.
- Chill on pan or drying rack for at least 10 minutes and E N J O Y
