The BEST Oatmeal Cookie Recipe!

Hey everyone! So yesterday, I made one of the best oatmeal cookie recipes I have ever made. I'm also doing this 21 day thing where I can't have candy, cake, etc. So, I figured oatmeal is healthy...let's make a cookie which satisfies yet isn't overly junky and bad for you. It also tastes a-mazing with the perfect balance of crunchy oats and gooey batter! The pictures show chocolate chips but I also made some without chocolate for myself for a more clean version since it is the new year. It was also a super quick recipe and I had all the ingredients at home without even having to think about them! Anyways, without further a do let's get into the recipe.

Yields:
About 27 small cookies

Ingredients:

  • 1 egg
  • 1/2 cup (113 grams) butter, unsalted
  • 1/2 cup packed, brown sugar
  • 1/4 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats (not instant/quick cook oats!!)
  • 3/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips (optional)
  • 1/2 cup nuts or raisins (optional)

Steps:

  1. Preheat oven to 350F (180 C)
  2. Combine eggs, sugars, vanilla, and butter and beat with an electric mixer until creamed and well-combined
  3. Scrape down sides of bowl with spatula. Add the oats, flour, cinnamon, baking soda, salt and beat until just combined on low speed
  4. Add optional chocolate chips, nuts, or raisins and beat/mix until just combined
  5. Scoop out measured amount onto baking sheets
  6. Bake for around 10 minutes...even if the cookies still look gooey and glossy in the center take them out! They will set once out of the oven and it's very important that you don't over bake these cookies.
  7. Chill on pan or drying rack for at least 10 minutes and E N J O Y

They look pretty delicious right? And trust me they are not like your usual, dry oatmeal cookies over baked and with no flavor. I suggest you make these right now...yep, now and I promise you, you won't regret it! This recipe was taken from http://www.averiecooks.com/2014/11/the-best-oatmeal-chocolate-chip-cookies.html  and she has some amazing other recipes which you should go and check it out!
